Rice Pudding

What you need:
1/2 CupUncooked Rice
1/4 CupSugar
1/4 teaspoonSalt
4 CupsWhole Milk
2 LargeEggs
1 teaspoonVanilla
1/2 StickCinnamon
1/4 CupRaisins
1.Place the first four ingredients in a sauce pan, and bring to a boil. Stir to prevent scorching.
2.Remove from high heat and place in a double boiler and simmer 45 to 60 minutes, or until rice is tender.
3.In a small bowl, whip eggs with a fork, then slowly add one cup of hot rice and milk mixture (this is to prevent curdling), then rapidly stir into large mixture.
4.Simmer until thickened stirring occasionally.
5.Add vanilla. Also add the cinnamon and raisins if desired. Serve hot or cold.
